Butternut, Corn and Coconut Soup
This is a delicious creamy soup that morphed from a different soup recipe that called for kabocha squash. I had to use ingredients that I had readily available, so I substituted the kabocha for a butternut squash and a beautiful organic garnet red yam. This recipe is really so easy, it almost makes you feel guilty ! But trust me, it really is delicious with the pasta cooking itself in the sauce, releasing all of the yummy starch and absorbing the garlic and tomatoes .
